McCabe Callahan


McCabe Callahan, Founder & CEO, Community Funded
McCabe Callahan has been an entrepreneur his entire life. He founded his first official business, Mugs Coffee Lounge in 2002 while still attending college and grew to multiple locations. In 2011, McCabe founded Community Funded Enterprises. His team has pioneered the community building, day of giving and crowd funding industry beginning with launching the first ever fully integrated higher education crowd funding platform with Colorado State University in early 2013. Since then, he has been a thought-leader speaking at conferences and working with organizations to help them innovate their community building and fundraising strategies. Community Funded is focused on holistic online fundraising solutions connecting, supporting and empowering organizations to tell their story better. Community Funded has helped over 1000 campaigns raise over $5,000,000 in philanthropic donations while building communities along the way. We have worked with over 35 higher education institutions as well as healthcare and non-profit organizations. We currently serve some of the largest most effective fundraising organizations around the US such as Penn State, University of Illinois, Texas State University, Children’s Hospital, University of Colorado, and Colorado State University.

 

Ashley Colpaart

Ashley is co-founder and CEO of The Food Corridor, a virtual food hub that connects food entrepreneurs to commercial kitchen space.

The Food Corridor is the first food tech start-up aiming to regionalize food systems through reducing redundancy, increasing efficiencies, and providing a seamless interface for anyone seeking out commercial kitchens, commissaries, processing, co-packing and food storage spaces. At the same time, institutions and businesses can more effectively utilize their assets, providing additional revenue streams to commissaries, schools, food banks, churches, restaurants and more.

Ashley is a Registered Dietitian and earned a Doctorate in Food Systems from Colorado State University and a Masters in Food Policy and Applied Nutrition from the Friedman School of Nutrition Science and Policy at Tufts University. She has a unique systems understanding of food and human health in social, economic, and environmental spheres.
Ashley’s writing has been published in Today’s Dietitian Magazine, the Environmental Nutrition Newsletter, US Food Policy blog, the Journal of Hunger and Environmental Nutrition, and Tufts Nutrition Magazine. Her work has also been recognized by awards, including The Northern Colorado and Colorado Academy of Nutrition and Dietetics Emerging Leader Awards; The Western Extension Young Professional Award; The Tufts Presidential Award for Active Citizenship and Public Service; and the Excellence in Hunger and Environmental Nutrition Award.

Menno Axt


Currently Menno is the Membership & Programme Manager at Dogpatch Labs in Dublin, Ireland, where he leads the Alltech Accelerator a late-stage Agtech accelerator.. He has built direct experience with accelerator programmes through co-founding his own early stage startup and joining the New Venture Accelerator at Colorado State University. Menno subsequently joined Galvanize, a leading co-working space & tech learning community in the US where he oversaw Membership and Entrepreneurial Programming, which involved the coordination of 25+ mentors and delivering  workshops in less than 9 months. Afterwards he joined Dogpatch Labs focusing on re-developing the Dogpatch Labs Membership Strategy and entrepreneurial programming to enhance the member experience. Menno has created initiatives such as First Fridays for Startups, powered by Google. Menno is an alum of Colorado State University, graduating with a double-major in Business & Economics in May of 2015.
